Hearty Roast Chicken & Veggie Casserole
- 350 grams Frozen Mixed Vegetables
- 80 grams onion, (Finely Diced)
- 150 grams Butter, divided 3 x 50g
- 50 grams plain flour
- .5 teaspoon Dried Sage Leaves
- .5 teaspoon black pepper
- .25 teaspoon salt
- 500 grams Chicken Stock/Broth
- 188 grams Milk
- 400 grams Cooked Roast Chicken, Shredded
- 400 grams sliced potatoes, Quartered
- 4 slices bread, Cubed
- 2 tablespoons dried italian herbs

Cook vegetables according to package directions; drain.
Meanwhile, sauté the onion in 55g butter for 3 minutes, Varoma, Reverse, Speed 1 or until tender.
Scrape down.
Stir in the flour, sage, pepper and salt 1 Minute, Varoma, Reverse, Speed 1 or until well blended.
Gradually add broth and milk, 1 Minutes, Varoma, Reverse, Speed 1.
Bring to a boil; 6 Minutes, Varoma, Reverse, Speed 1 cook until thickened.
Stir in the chicken, potatoes and mixed vegetables; 2 Minutes, 105C, Reverse, Speed 1.
Transfer to a greased 2.8 Lt, 22.5cm x 33cm. baking dish.
In 2 batches melt 50g butter; toss 1 tablespoon Italian herbs with 2 slices of bread cubed, 1 Minute, 60C, Reverse, Speed 1.
Sprinkle over chicken mixture.
Bake, uncovered, at 230° (F/F 210°) for 40 minutes or until Potato is cooked and heated through.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.
We use Australian tablespoons and cups:
1 teaspoon equals 5 ml;
1 tablespoon equals 20 ml;
1 cup equals 250 ml.
All herbs are fresh (unless specified) and cups are lightly packed.
All vegetables are medium size and peeled, unless specified.
All eggs are 55-60 g, unless specified.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Thoroughly enjoyed this. I used fresh sage, broccoli and carrots and frozen corn. I did cover mine for the last 10 minutes of cooking as my croutons were getting a little dark. Otherwise followed recipe and was very happy with the result. Instead of croutons you could always put a pastry top on to make it like a pie. Will definitely make again.
Really tasty and I love the croutons! I added a few vegies I had to use up and reduced frozen.
