Ingredients
LCHF Mexican Taco Bake
- 500 grams Organic Grass fed Minced Beef, (I got mine from Aldi)
- 1 brown onion, chopped in half
- 2 red capsicums, roughly chopped
- 2 Zucchinis, Large - roughly chopped
- 1 400g tin chopped tomatoes, (I use ardmona)
- 2-3 tbsp Skinny Mixers Taco Seasoning, Recipe link in comments
- 350 g Cheddar cheese, Roughly chopped (grate in thermie)
- 3 tbsp tomato paste

- This recipe isnt solely thermie - all the prep is done in thermie.
Skinnymixers taco seasoning will need to be made firstin your dry thermie bowl. See recipe here http://skinnymixers.com.au/skinnymixers-mexican-spice-mix/
Set your oven to 200oC.
In large pan (at least 30cm as it gets very full) brown your meat.
Meanwhile in Thermie add onion and capsicum in the bowl and chop 2 seconds speed 6.
Once meat is browned add onion and capsicum to pan and cook for a few minutes.
Meanwhile in thermie add zucchinis and chop 2 seconds speed 6 - smaller if you need to hide for kids.
Add tinned tomatoes,paste and mexican taco seasoning and mix 5 seconds speed 4 MC ON.
Empty into pan and cook for about 5 minutes until reduced a little bit.
Meanwhile add roughly chopped cheese to mixing bowl (no need to wash) and grate 10 seconds speed 10.
Add meat mix to baking dish and top with cheese and cook for about 15 minutes in oven or until cheese is melted and browned. Can serve with a spoonful of sour cream
LCHF Friendly. Paleo Friendly without the cheese or cream if you just want to eat the meat.
This is an easy quick after work meal and has heaps of veggies in there that your kids wont know about

Added red kidney beans...really great love it
This is a fantastic recipe we all love it. We serve it with gaucomale sour cream corn chips tomato lettuce.....it is so delicious!
I really loved the flavour of this recipe, but it was too rich with the amount of cheese used. There was also far too much liquid - nearly like a soup. Really sorry, but my family wasn’t a fan of this recipe.
Wow this was delicious and makes a truckload!!! Lots of leftovers for fakeaway another night.
I used pork mince and added some thermi chicken stock paste and also used combo of tasty, parmesan and mozzerella cheeses for the topping.
I served it with guacamole, sour cream, coriander and jalepenos in cos lettuce leaves instead of taco boats. The whole family loved it. Definitely making this again. Thanks for a delicious recipe.

This was so easy to make and really delicious. I added 1 tbsp of beef stock concentrate to the mix and topped with a mix of mozzarella, cheddar & Parmesan. Will definitely be making this again.
