Batter
- 150 grams cornflour
- 6 egg yolks
- 80 grams water
- 4 chicken breasts
- pinch pepper
- pinch salt
Lemon Sauce
- 5 cm ginger, grated
- 130 grams lemon juice
- 2 chicken stock cubes
- 2 tablespoons cornflour
- 70 grams honey
- 50 grams brown sugar
- 400 grams water
- bunch spring onions

- Place a bowl ontop of mixing bowl lid.
- Weigh all the batter ingredients except chicken into the bowl and mix with a folk until you get a thick batter with no lumps. (you can add more water or cornflour if needed).
- Using a meat tenderiser, beat the chicken breast out.
- Place chicken breasts into batter and mix to completely coat.
- In a large frypan, shallow fry battered chicken.
- While the chicken is cooking add all sauce ingredients except the shallots to the mixing bowl and mix without MC for 10mins 120 degrees speed 2 or until sauce thickens. (ginger can be greated prior to adding the other ingredients)
- Slice chicken breasts into slices and serve ontop of steamed rice, then pour the lemon sauce over the chicken slices and garnish with the spring onions.

Ginger can be grated in bowl prior to sauce being made
you can just use 4 egg yolks if you like, it will taste just as good.
