Ingredients
- 400 grams pork neck, cut into 2cm cubes and into freezer for an hour
- 45 grams cooking oil
- 5 dried mushrooms, soaked in 100g hot water (reserve soaking water), then slice thinly
- 20 grams Wood ear fungus, soaked and sliced thinly
- 2 shallots, peeled and halved
- 2 clove garlic, peeled
- 10 grams sesame oil
- 30 grams oyster sauce
- 30 grams light soya sauce
- 20 grams caramel soya sauce
- 20 grams kecap manis
- 15 grams sugar
- 20 grams Chinese wine
- 10 grams cornflour
- 40 grams reserved mushroom water

Put 200g of the cubed pork neck into the TM bowl and mince sp7/ 2 sec. Set aside and repeat with the second batch. Set aside meat.
Place the shallots and garlic into TM bowl and mince sp7/3-5 secs. Scrape down sides of bowl
Add oil and saute 3 mins/ varoma/ sp2
Add minced pork and cook 5 mins/ varoma/ "Counter-clockwise operation" / sp1/ MC off
Stop the Thermomix 2-3 times throughout the cooking process to break up the minced pork using the spatula as necessary
Add sliced dried mushrooms and wood ear fungus, sesame oil, oyster sauce, light soya sauce, caramel soya sauce, kecap manis, sugar, chinese wine, cornflour and reserved mushroom water and cook a further 5 mins/ varoma/ "Counter-clockwise operation" / sp1/ MC off
Add some bok choy/ kai lan to steam in your varoma whilst the mince pork is cooking in the jug
Serve with your choice of noodle or rice.

I didnt have caramel soya sauce or wood ear fungus, never heard of them, but it was still fantastic. Hubby loved it so much he asked it to be a regular.
