Ingredients
- 50 g olive oil
- 1 piece ginger
- 30 g raw sugar, or Rapidura Sugar
- 800 g pork spare ribs, Softbone ribs preferred
- 2 stalks spring onions, Roughly chopped
- 100 g Pineapple, chopped; if canned, drain juices.
- 100 g red capsicum, chopped;
- 1 tablespoon Gochujang, Korean Chilli or Red Capsicum Paste
- 1 tablespoon Thermomix Vegetable Stock Paste
- 80 g Sweet red wine, This is optional; Shaoxin or any red wine is acceptable;
- 2 tablespoon kecap manis, Indonesian sweet soy syrup

Add oil, chopped ginger, sugar and stir fry 5 minutes, Varoma Tempature, Speed 2 "Counter-clockwise operation" .
Add ribs, wine and sauces (TM Vegetable Stock Paste, gochujang & kecap manis). Cook for 25 minutes, Varoma Tempature on Speed 2 "Counter-clockwise operation" .
Add chopped capsicum, spring onions and pineapple. Cook for another 10 minutes, Varoma Temperature on Speed 2 "Counter-clockwise operation" .
Tip
To make this a 1-pot dish: steam vegetables in last 10 minutes in Varoma receptacle/tray. Pour into Thermoserver to keep warm with ribs; Steam rice as per Everyday Cookbook instructions (~20 minutes).
No need to wash Bowl - Rice will be slightly coloured and not pure white as liquid in pot is remaining caramelised sauces from ribs. If you want whiter rice, rinse bowl before steaming rice.
Pork softbone can be found in local Asian butcher, price is around $7/kg. I choose this because cartilage is edible and it's good for you. Brings more texture into dish.
