Ingredients

  • 1000 grams Lamb, Boneless Butterflied Shoulder
  • 3 sprigs fresh rosemary, Leaves Only
  • 2-3 cloves garlic, To Taste
  • 2-3 tablespoons coconut oil
  • 1-2 Fresh chillis
  • 1-2 tablespoons ginger
  • 1-2 tablespoons Vegetarian Stock Paste, Basic Cook Book Pg 62
  • 1 portion mashed potatoes, Basic Cook Book Pg 198
  • 1-2 brown onions, Peeled and Halved

Recipe's preparation

    Chop & Blend
  1. Place Rosemary, Garlic, Chillis, Ginger, Onions & Stock into bowl - Closed lid"Closed lid" - Gradually Increase to speed 8 for 15 seconds

  2. Add 500 Grams of water and Coconut Oil Closed lid"Closed lid" Blend Speed 9 for 5 Seconds Counter-clockwise operation"Counter-clockwise operation" for 5 Seconds

  3. Roast
  4. Lightly spray a roasting tray big enough to fit the lamb.  Place the lamb in the tray.  Pour liquid seasoning from Bowl to come half way up the side of the tray.  (Add more water if needed)

  5. Turn meat a few times to moisten with the seasoning

  6. Roast
  7. Turn oven to 150-180 Degrees depending on oven - fan forced works well at 150 Standard at 180.  Set timer for 1 Hour.

    Remove meat from oven - turn over - making sure all meat is moist with the seasoning - Return to oven - Set Timer for 1 Hour

    Cook for 3-5 hours - Turning every hour

  8. Serve
  9. Place Lamb on a chopping board and use a fork to PULL the meat to serve.  It will just fall apart.  Serve with mash - Garnish with Salt + Pepper and some Chopped Chives

Tip

Variations -

Add a seperate tray in the oven towards the end of the cooking time to Roast Veggies.

Any herbs, spices and seasonings can be used - Whatever is left in the fridge works fine for seasoning.

Cranberry Jelly Sauce is awesome with this.
