Marinade
- 400g can coconut milk
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 2 tsp garam masala
- 1 tsp tumeric powder
- 1 tsp salt
- 750 g skinless chicken thigh fillets, cut into bite size pieces
Curry
- 350 g pumpkin flesh
- 1 litre water
- 1 onion, halved
- 40 g Butter
- 30 g ginger paste
- 15 g garlic paste
- 2 tbsp tomato paste
- 1 tbsp garam masala
- 2 tsp Baba's Curry Powder
- 1 tsp coriander seed, ground
- 1 tsp ground cumin
- 1 tsp salt

- Place all of the marinade ingredients (except the chicken) into the mixing bowl. Mix 5secs/sp4. Scrape down the sides of the bowl.
- Add in the chicken and mix 15secs/sp2"Counter-clockwise operation" . Place into a bowl or thermoserver and refridgerate for at least 30 mins, or upto 24 hours.
- Meanwhile, without washing the bowl, add 1L of water into the mixing bowl. Place the pumpkin into the simmering basket and place into the mixing bowl. Cook for 15 mins/100*/sp3, or until tender.
- Add the onion to the mixing bowl and chop 5sec/sp5. Scrape down the sides.
- Add the butter and cook 5mins/120*/sp1.
- Add in the ginger, garlic, tomato paste, and spices, and saute for 3mins/120*/sp1.
- Add in the reserved pumpkin and marinated chicken. Cook for 22 mins/Varoma/sp1"Counter-clockwise operation" .
- Serve with rice and naan bread.
