Sticky Date Pancakes
- 125 g pitted dates
- 80 g Butter, plus extra for cooking
- 500 g Milk
- 1 egg
- 30 g brown sugar
- 300 g Self Raising Flour
- 75 g plain flour

- Add the dates to the mixing bowl. Chop 5 secs/sp10. Scrape down the bowl.
- Add the butter and melt 2mins/70*/sp1.
- Add in the milk, egg, sugar and flours. Mix 10secs/sp5. Scrape down the bowl and use spatula to mix in any remaining flour around the edges.
- Add some butter to a frypan over med-low heat. Cook the pancakes until buble start to appear then flip over and cook until golden.
- Optional - Serve with vanilla icecream, caramel sauce and chopped pecans.

This is quite a thick batter so cook it low and slow to avoid burning.
