Ingredients
Roast Chicken
- 1 Whole Large chicken, Roughly 1.5 - 2kg in weight
- 30 grams Butter
- 1 tablespoon honey
- 1 tablespoon lemon juice
Stuffing
- 1 onion, halved
- 120 grams macadamia nuts, unsalted
- 2 slices Sandwich Bread, torn into pieces
- 2 teaspoons dried rosemary
- 2 tablespoons honey
- 1 apple, cored and quartered
- 120 grams bacon, roughly diced

I'm cooking this todayRecipe's preparation
1. Gently wash out the chicken cavity with water and pat dry with paper towel. Place in varoma and set aside.
2. Place butter, honey and juice in thermomix. 3 min, 90 degrees, speed 2.
3. Empty into a bowl and set aside.
1. Place all stuffing ingredients into the thermomix bowl. Turbo pulse until all ingredients have minced together. I usually find this takes about 6 pulses.
1. Place stuffing inside the chicken. If you are not using the oven afterwards to crisp up the skin brush on the honey mixture you set aside earlier.
2. Put 1.5L of water into the thermomix bowl. Place Varoma with chicken in situe into place.
3. 70 min, VAROMA, Speed 2 ( time may vary depending on chicken size, extend time if chicken is not cooked through).
4. Remove chicken and place into baking dish. Brush on thehoney mixture from earlier. Place into a pre-heated oven of 200 degrees for 15-20 minutes, or until the skin is crispy and brown. This step can of course be missed if you wish to only use the thermomix.
5. Remove from oven, slice up and serve

Tip
Any leftover stuffing can be placed in a container and frozen for future meals.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. i didn't bother crisping in the oven (didn't want to dirty a pan) and it was tender and juicy.
i was out of macadamia nuts so used cashews instead.
had this for dinner tonight and it was amazing.....
