Ingredients
Spicy Meatballs
- 40 grams bread, fresh or stale, cut into pieces
- 40 grams Milk
- 6-8 sprigs fresh flat-leaf parsley, leaves only
- 2-3 sprigs fresh basil, leaves only
- 1-2 cloves garlic
- 1-2 birds eye chillies, deseeded, if preferred
- 1/4 brown onion
- 400 grams Beef mince
- 2 eggs
- 1/2 pinch salt
- 1 pinch ground black pepper
- oil for greasing
Tomato Sauce
- 1-2 cloves garlic
- 3/4 brown onion, cut in quarters
- 20 grams olive or coconut oil
- 800 grams fresh tomatoes, quartered
- 1 teaspoon salt
- 2 pinches ground black pepper

1. Place a small bowl onto mixing bowl lid and wigh in bread and milk. Set bowl aside and leave to soak.
2. Place parsley, basil, garlic, chillies and onion into mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula. Repeat if necessary.
3. Add beef mince, eggs, salt, and black pepper. Squeeze milk out of bread and discard milk. Add bread into mixing bowl and mix 10 sec/speed 5. Transfer into a bowl. Clean and dry mixing bowl.
4. Lightly grease Varoma dish and tray. With oiled hands, shape small meatballs (4cm) and arrange them into Varoma dish and tray. Set Varoma aside.
5. Place garlic, onions and oil into mixing bowl and chop 5 sec/speed 5, then sauté 3 min/120 C/speed1.
Add tomatoes and crush 7 sec/speed 6.
Add salt and pepper. Place Varoma into position and cook 20 min/Varoma/Speed 1. Serve meatballs hot with sauce. Spinkle with grated cheese.

Tip
* Use any white or light crusty bread/rolls. If bread is fresh, cut into pieces and place in the freezer for 30 minutes or until bread is slightly frozen. Proceed as per recipe.
* Serve meatballs with spagetti / taglatelli and garlic bread or rice or steamed potatoes
* Meat can be minced in the Thermomix to use in this recipe.
VARIATIONS:
* If fresh tomatoes not available, 2 x 400g tins of crushed/chopped tomatoes can be used. Alternatively 400g of fresh tomatoes and 400g of tinned tomatoes also work well.
* Part or all of the beef mince can be replaced with minced veal, pork or chicken meat, to taste.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
