Ingredients
Cauliflower Bolognaise
- 100 grams Parmesan cheese, to serve
- 1 half cauliflower, broken into florets
- 2 garlic cloves, peeled
- 1 brown onion, halved
- 20 grams Butter/olive oil, to saute
- 4 bacon rashers, sliced into strips
- 1 jar tomato passata, or tinned chopped tomatoes
- 1 heaped teaspoon TM vege stock
- pasta, of your choice
- fresh/dried herbs, to taste

Grate parmesan, set aside. No need to wash bowl.
Break cauliflower into florets. Put in TMX bowl, and chop 5 seconds, sp4. Set aside.
Add onion and garlic to unwashed bowl and chop 3 secs sp 6.
Add olive oil/butter and saute 2 minutes 100deg sp1.
Chop bacon into strips and add to the bowl - brown 3 minutes 100deg sp 1.
return the cauliflower to the TMX bowl, add in the jar of passata and fresh/dried herbs to taste.
Add TMX vege stock concentrate and herbs.
Cook 15 minutes 100deg sp1.
You may need to use the simmering basket in place of the MC to prevent spitting.
Serve over pasta of your choice and top with freshly grated paremsan.
Tip
This is a fabulous way to hide cauliflower in a dish for children. The consistency when cooked is very similar to a beef bolognaise, but is of course beef free. My children had no idea when they first tried this just what it was, but they enjoyed it and all asked for more!

I was jubious how my 3 kids (who eat very little vege) would think of this but they all LOVED it which is amazing! Quick easy midweek meal!
This was a massive hit with my family tonight !!!! I served mine with chinese cabbage. And I also used the tomatoe paste on here with it . Will be adding this to the collection for sure
This was easy, tasty and a great way to use up a whole cauliflower I chopped half a cauliflower at a time. I added a bay leaf and anchovies but not sure if it really added anything extra to the bolognese. Will will try adding carrot next time.
