Ingredients

  • 200 grams Parmesan cheese, cubed
  • 250 grams Bread or Panko Crumbs
  • 500 grams chicken breast, cubed
  • 1 teaspoon chicken stock paste, optional
  • 4 eggs
  • Olive Oil and Butter for frying

Recipe's preparation

    • Place cubed Cheese into TM bowl and grate for 5 seconds on Speed 6.  Add Bread, chop for a further 5 seconds on Speed 6.  If using Panko Crumbs, just pour the Panko Crumbs and Grated Cheese into a deep dish for later use.
    • Add chicken to bowl and mince for 8 seconds on Speed 7.  
  1. Add Stock Paste and 1 x Egg.  Mix for 8 seconds on speed 6.

  2. Wisk remaining eggs in a deep dish.

  3. Roll teaspoons of chicken mixture into balls, roll in egg, flatten and coat with crumb mixture.  Coat again in egg, then crumb mixture.  Set aside.

    Tip:  I prefer to use food preperation gloves for this step.

  4. Heat even amounts of Olive Oil and Butter in a medium heat frypan.  Cook batches of chicken nuggets until golden ol each side.  

    Tip: If frypan heat is too high, nuggets will brown without cooking right through.

    Popular with the big kids - 19 & 21!! Baked them in the air fryer so need to add either another egg of some liquid to the chicken. Yummo

    I made these in such haste that I left the cheese and bread crumbs in the bowl then added the chicken and other ingredients rolled them up and pan fried them like that. The kids loved them so thank you.

    These are so easy to make and so delicious.
    My daughter loves to have them as part of her school lunch.
    I will try them in the oven next time to reduce the amount of oil needed for frying.

    Did the chicken or the egg come first? This recipe answers the question: The chicken came first, the egg isn't added until step three.

    Very tasty and super quick to make. I cooked them in the oven 180 for 20mins, with a spray of oil before putting them in. Then i flipped them over half way. Nice and crunchy.

    I got my toddler involved in making my batch.  I put some rice puffs in a plastic bag - let the air out and handed my daughter a mini rolling pin and let her bash away for a while.  The texture was great and she loved helping.  Thanks for the recipe.
