Ingredients
Corn ricotta fritters
- 150 g Frozen Corn
- 300 g water
- 1 carrot quartered
- 1 zucchini quartered
- 130 g Milk
- 150 g Self Raising Flour
- 2 eggs
- 125 g ricotta cheese
- 2 tablespoons chopped parsley
- olive oil, for frying

1. Add corn & water into the Thermomix & cook for 2.5 min, 100C, reverse, speed 1. Drain out the water & set aside in a bowl.
2. No need to wash the Thermomix, just make sure all the corn is gone. Grate the carrot & zucchini for 3 seconds, speed 5. Add to the corn bowl.
3. Mix eggs, milk & flour for 5 seconds, speed 5. Add in the corn-zucchini-carrot mixture, ricotta cheese & parsley. Combine everything for 30 seconds, reverse, speed 3.
4. Heat 1 tablespoon of olive oil in a frying paon over low-medium heat. Spoon 1 tablespoon of the mixture, 3-4 fritters at a time, and cook for 1 min each side or until golden. Repeat with remaining mixture, adding more oil as needed.
Tip
- great for baby/toddler or healthy adult snack
- serve as is or with sliced avocado & parsley leaves
- these are great for freezing in a zip lock bag 5-6 at a time, place bag in container in the morning & in your handbag, defrost just in time for a healthy lunch

Just made these and they r awesome I made a double batch by increasing by 2/3 all ingredients.
I used tinned corn and fresh carrots and basil as that's what I had also I added some mozzarella too
This is absolutely delicious and my kids loved it. I did add a teaspoon of salt and it was perfect. Thank you for the recipe.
