Ingredients
Black rice with pumpkin - vegan
- 400 gram Black Rice
- 250 g water
- 1 pinch salt
To make the sauce
- 1-2 --- Chillies, Add more if you like extra heat
- 3 cloves garlic
- 1 teaspoon salt
- 1 tablespoon cumin
- 1 teaspoon coriander, dried
- 1 tablespoon coconut oil, or oil of your choosing.
- 1 --- red onion
Now for the rest!
- 1/2 pumpkin, cubed
- 2 cloves garlic
- 4 tablespoon coconut oil
- 2 tablespoon cumin
- 200 g Vermicelli noodles, Fried

- Because black rice takes so long to cook I like to do this part on the stove while I use my thermie for the rest.
Boil your rice for 15 min then reduce to low heat and cover for an hour or until cooked. Black rice takes much longer to cook than normal rice.
While it's cooking, follow steps below: - Steam cubed pumpkin in varoma dish for 20mins on varoma heat, sp 1.5.
- Once it's done steaming, set aside in thermoserver or large bowl and prepare your sauce.
Add to mixing bowl:
Chilies, garlic, onion, salt, cumin, coriander and coconut oil.
3sec, sp 10.
Cook for 3min at 110deg, sp 1.5
Add salt, cumin, coriander, can tomatoes, cook 4.5min 110deg sp 1.5
Set aside in the same bowl as your pumpkin. - Add garlic, and coconut oil and chop 3sec sp 10
Add vermicelli noodles (broken up), to small saucepan and fry on high until colour of noodle changes to white. -tip, break up noodles while inside a zip lock back for less mess, add cumin to noodles and stir through while it cooks.
Add all ingredients to large mixing bowl and stir it all through.
