Chicken Mushroom Risotto
- 2 cloves garlic
- 40 grams Parmesan cheese
- 1 brown onion
- 40 grams extra virgin olive oil
- 320 grams arborio rice
- 60 grams white wine, dry
- 1-2 tbsp Vegetable stock paste
- 60 grams white wine, dry
- 1-2 tbsp Vegetable stock paste
- 250 grams mushrooms
- 720 grams water

- Place parmesan cheese into mixing bowl and grate 10 sec/speed 10. Transfer into a bowl and set aside. Clean and dry mixing bowl.
- Place brown onion & garlic into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add diced chicken to the mixing bowl.
- Add butter and extra virgin olive oil and satue 3min/120C/ speed1.
- Insert butterfly whisk. Add rice and saute 1 min/120C/"Counter-clockwise operation" /speed 1.5, without measuring cup.
- Add white wine and saute 2 min/ Varoma / "Counter-clockwise operation" /speed 1.5, without MC. Scrape bottom of mixing bowl well with spatula to loosen rice.
- Add stock, mushrooms and water and again scrape bottom of mixing bowl with spatula to loosen. Cook 13 min/100C/"Counter-clockwise operation" /speed 1.5, placing simmering basket instead of measuring cup onto mixing bowl lid.
- OPTIONAL: Add spinach to the bottom of Thermoserver
- Trasnfer risotto into ThermoServer. Using the spatula combine with reserved parmesan, and spinch if using, and serve immediately.
PREPARATION
Tip
- If you don't have any butter just use total 50g oil. Conversely if you dont have nay oil just use total 50g butter.
- This recipe is strongly based around the musroom risotto from the basic cook book, it has added garlic, chicken and spinach.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). The method mentions adding butter & chicken but nowhere in the ingredients does it list them or the amount!
