Ingredients

Orecchiette Broccoli

  • 500 g Orecchiette Pasta
  • 125 g parmesan
  • 2 clove garlic
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon salt
  • 6 slice Anchovie fillets, about 1 sm tin + oil
  • 1 Large Broccoli Head & Stalk
  • 3 sprig thyme leaves
  • 1 --- Cup of water, Take the water from the pasta boiling
  • olive oil

Recipe's preparation

    Pasta
  1. Into a large pot of  boiling water, add  a good tablespoon of salt and Orecchiette.  Cut the broccoli taking off the florets and separate them into bite size pieces.

    Cut up the stalk into ice cube sized pieces. Set aside.

     After about 8 mins or so add your broccoli florets. Once the pasta is "el dente" just cooked through, reserving on cup of water, drain the pasta and broccoli. Set aside.

  2. Broccoli Sauce
  3. Meanwhile, while your pasta is cooking, into the Thermomix add

    Parmesan Closed lid"Closed lid" Speed 6 3-5 seconds grate the cheese until fine. Set aside.

    Into the Thermomix add Garlic. Closed lid"Closed lid" Speed 6, 3 seconds mince the garlic.

    To this add

    Broccoli stalks, Chili, Anchovies & their oil. Closed lid"Closed lid"  Speed 8, 8 seconds blitz into a paste. Scrape down the sides.

    Add about 2 tablespoons of olive oil. Cook on Varoma Closed lid"Closed lid" 2 minutes.

    Check if the mixture needs more oil if it looks dry, add another tablespoon. Scrape down the sides.

    Continue cookingClosed lid"Closed lid" for 5 minutes 100 degrees.

    Add 1 Cup water. (not pasta water) & Thyme.

    CookClosed lid"Closed lid" 100 degrees 3 minutes

  4. Into the large pot that you cooked your pasta, mix together the drained pasta, broccoli florets and the broccoli sauce unitl mixed through.

    Add Parmesan and mix lightly through. Season with salt & pepper to your liking.

    To give your meal a nice "shine" add a little at a time, the pasta water your reserved, stir and toss over gently until the desired smooth lush texture you want appears.

    Serve.

Tip

This is lovely served on it's own or with a salad of mixed lettuce tossed in lemon juice, oilive oil, salt and pepper.

Or you can also serve some chicken fillets that have been steamed in the Varoma.

    Easy and delicious. Used small tin of tuna in oil instead of anchovies. A winner.

    Good recipe. I added 6 black olives instead of anchovies. I would suggest getting a start on the sauce before cooking pasta as my pasta was ready before the sauce was. Also I steamed the broccoli so it stayed nice bright green. And also used less cheese than stated. Thumbs up!

    I didn't have enough Broccoli so added Cauliflower. It was really tasty and lovely.  I used 2 large cloves and it was a bit overpowering and half the cheese was plenty, anymore and that too would have been overpowering.  Its all down to personal preference but this is a great basic recipe to start with and tweak to your own tastes.  Thanks, ths waslovely and easy to follow.

    This was nice for something different. I made half mixture and probably added too much cheese.
