Ingredients

Roasted pumpkin

  • 800 g pumpkin, I prefer Jap/Kent
  • 4 cloves garlic
  • 3 sprigs rosemary
  • olive oil light
  • salt and pepper to season

Risotto

  • 40 g Parmesean cheese
  • 150 g onion
  • 3 slices rasher bacon
  • 40 g Butter
  • 40 g extra virgin olive oil
  • 320 g Arborio rice
  • 60 g dry white wine
  • 1-2 tbsp TM vegetable stock concentrate
  • 720 g water

Recipe's preparation

    Roasted pumpkin
  1. Preheat oven to 180 degrees

  2. Peel and cut pumpkin into small pieces. 

  3. Toss pumpkin pieces into baking tray and add garlic and rosemary.

  4. Add desired amount of olive oil and season with salt and pepper.

  5. Bake for 30 min or until cooked.

  6. Set aside.

  7. Risotto
  8. Place Parmesan cheese into mixing bowl and grate 10 sec/speed 10. Transfer into a bowl and set aside.  Clean and dry mixing bowl.

  9. Place onion into mixing bowl and chop 3 sec/speed 5.  Scrape down sides of mixing bowl with spatula.

  10. Cut bacon rashers into batons/pieces, which ever you prefer. 

  11. Add butter, bacon and extra virgin olive oil and saute 3 min/120 degrees/speed 1/Counter-clockwise operation"Counter-clockwise operation" .

  12. Insert butterfly whisk.  Add arborio rice and saute 1 min/120 degrees/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5, without measuring cup.

  13. Add white wine and saute 2 min/Varoma/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5, without measuring cup.  Scrape bottom of mixing bowl well with spatula to loosen rice.

  14. Add stock, roasted pumpkin and water and again scrape bottom of mixing bowl with spatula to loosen.  Cook 13 min/100 degrees/Counter-clockwise operation"Counter-clockwise operation" /speed 1.5, placing simmering basket instead of measuring cup onto mixing bowl lid.

  15. Transfer into ThermoServer.  Using the spatula, combine with reserved Parmesan and serve immediately.

     

    You could also garnish this with extra pan fried bacon if desired.

    Thank you. Very tasty. I layered the bacon over the pumpkin while it was in the oven. My house smelt amazing. The risotto was delicious.

    Biancabell:I don't think you need a thermoserver, you can't put them in the oven a d I have found they don't keep things hot.

    Made last night, great taste. Only criticism was that I found it difficult to add the butterfly whisk due to the amount of volume (butter, bacon) already in the thermobowl.

    Subsequently I don't think I inserted properly as it wobbled all over the place when mixing tmrc_emoticons.|

    Other than that, great recipe, would use again.
