Empty the Almonds into the Thermomix bowl and grind for 3 mins/speed 9.
Open the lid, scrape down the bowl and mix again for 1 min/speed 7.
Sometimes the timing varies depending on the freshness of the Almonds. If it doesn't resemble butter just yet, mix again on speed 7 and scrape down the bowl if necessary.
Store in an airtight jar in the fridge for a week.
Tip
Make sure the bowl is dry.
The fresher the almonds the better.

Katsmile: Sorry I've just read your comment; I store mine in the fridge for up to a week or alternatively you can freeze it.
I'v tried many almond butter recipes on this site and probably like this method the best.
Because I activate (soak and dehydrate) my almonds first it always takes a lot longer to get the right consistency.
After Step 1 (3 mins/Speed 9), I probably had to do 6 X 30 second increments, scraping down sides each time, before it reached a good consistency. I sometimes add a splash of macadamia oil or rice bran oil towards the end, if needed.

Mine doesn't last long but I've had it in a jar in the fridge for two weeks (no problem).
Do you have any direction as to how long butter can be store for?
