Anna's Tomato Relish
- 1500 g tomatoes, quartered
- 4 white onions, (large), sliced in 2cm pieces
- 0.5 l white vinegar
- 500 g white sugar, warmed slightly
- 2 level tsp mustard
- 2 level tsp curry powder
- 3 level tbsp cornflour

- Cut tomatoes and onions.
Sprinkle with salt and stand covered overnight - Next day, strain off the juice.
- Place tomato and onion mix in the bowl with the vinegar.
"Counter-clockwise operation" "Gentle stir setting" 60mins/100/speed 2 - Warm sugar slightly in the oven or microwave
- Add the sugar to the tomato mix and continue to boil
"Counter-clockwise operation" "Gentle stir setting" 10/100/speed 2 - In a separate jug mix the mustard, curry powder and cornflour with a Tbsp of vinegar until a smooth paste.
- Add mustard mix to tomato mix
"Gentle stir setting" 20sec/speed 1 - Boil for 10mins
10mins/100/speed "Counter-clockwise operation" 3 - Put in steralised jars while still hot.
Put lid on and put jar upside down for 10mins.
Leave out until cool
Tip
If using tinned tomatoes, don't dtand overnight but strain off as much juice as possible

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
