Ingredients
Step 1
- 1250 grams apples, Either green or slightly under ripe
- 1/2 cup apple cider vinegar
- 1 cup water
Step 2
- 400 grams molasses
- Sprinkle salt
- 3/4 Cup sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon mixed spice

Cut apples up (do not peal or core as this contains all the pectin).
Place in the bowl with the water and the cider vinegar and cook at 100 degrees Speed 1 until apples are completely mushy. Should take between 20 and 30 minutes.
Stir for 30 seconds, speed 4, until there are no lumps in the apples.
Push apples along with the cooking liquids through a sieve into a large bowl.
Place apples and all other ingredients into the thermomix bowl.
Cook at 100 degrees speed 2 for 1-2 hours with lid open to reduce. It should look dark and smooth.
Bottle into hot jars and seal. Should make approximately 3 jars full.
