Ingredients
Mayo
- 1 clove garlic, peeled. normal size not huge (Optional)
- 2 Eggs.
- 2 tsp Organic Dijon Mustard, heaped
- 2 tbsp organic apple cider vinegar or organic lemon juice
- 1 tsp Himalayan salt, ground
- .375 litre Avocado Oil, (1 1/2 cups (375ml)

Chop garlic clove 3 seconds speed 6. Scrape down sides.
Attach butterfly to bowl.
Add whole eggs, mustard, vinegar or lemon juice and salt to bowl. Mix for 30 seconds on speed 4.
Add MC (measuring cup) to lid. Make sure oil is in something that is easy to pour slowly from. Set timer to 2 mins. Turn machine onto speed 4. Then slowly and steadily pour in oil onto lid so that it takes about 1 minute and 45 seconds to pour in total oil. The oil will then trickle through the MC.
Let the thermomix keep running on speed 4 until the 2 minutes is up. If it takes longer to pour in the oil slowly just add 15 seconds extra to the time to make sure all oil is stirred in and emulsified.

Tip
If you dont want Garlic in the mayo you dont need to add it but it makes it taste awesome! This makes a fair bit of mayo and the recipe can easily be halved with no effect. All you need to do is just adjust the time from 2 minutes to 1 minute and 30 seconds.

So easy, and I love that it uses the whole egg.

Thia tastes delicious. I only had a 250ml bottle of avo oil, so I used 1 egg, 1 teaspoon of Dijon mustard, and a bit over a tablespoon of lemon juice. Still runny but tastes excellent 👍
Love this recipe xxx Replaced Avocado Oil with Grapeseed Oil as have made mayo before that didn't work. Will make with Avocado Oil next time.
The mayonnaise can be too wet with the amount of oil specified. I cut down the amount of oil (used grapeseed oil) and the consistency was much better.
I make this all the time. I use whole grain mustard instead and added a splash of lemon juice (love the tang flavour) to the mix.
I get about 450g and store it in a squeeze bottle at the back of the fridge it can last me a whole month and the flavour is still phenomenal.
Tastes good, but used grapeseed oil instead of olive oil and seeded mustard. Ended up a bit thinner than other mayonnaise I have made, but is ok because once it is on whatever you are using it on, it still does the job. Used lemon juice instead of apple cider vinegar and had enough for 1.5 jars. Have added this recipe to my collections. Thanks for sharing your recipe. Would give it 4 stars.

Delicious! Might try less mustard next time as I want that real egg taste. It's in my coleslaw already for dinner. Easy re ile and great instructions too!

I just made this and it was great. Next time I'll add less salt though as the Himalayan is a bit strong.
