Ingredients

Caramelised Pumpkin Hummus

  • 500 g butternut pumpkin
  • 2 cloves garlic
  • 400g can chickpeas, rinsed, drained
  • 100 g tahini
  • 200 g cold water
  • 50 g lemon juice, approx 1 lemon
  • 10-15 g Flaked Sea Salt
  • 50 g olive oil

Recipe's preparation

  1. 1) Pre heat oven to 180 degrees. 2) Peel & chop pumpkin into 2 inch pieces & place on a tray lined with baking paper.  Add garlic cloves to the tray & spray lightly with olive oil. Bake for 40 minutes. 3) Place cooked pumpkin, garlic & remaining ingredients into TM bowl, blend 20 – 30 seconds/speed 6. Use your TM spatula through the hole in the lid to give the bowl a stir as the dip starts to blend. 4) Taste & adjust seasoning if necessary. Refrigerate until required.

Tip

Pumpkin can be cooked ahead of time, even the day before.

This dip is amazing as a dip, but also lovely with dollops of dip on a pizza!

    Beautiful dip. Made it as instructed (with my own tahini) but I only needed to add 100g water because I was worried it would be too runny. I like the consistency a bit thicker. Thanks for sharing.
