Ingredients

chutney

  • 2 red onions peeled quartered, 200g approx
  • 30g olive oil
  • 1sprig rosemary, chopped
  • 2 bayleaves
  • 5 large red capsicun, 660g weight when roasted and peeled
  • 1 cinnamon stick, i used 1tsp as i had no sticks
  • 100g brown sugar
  • 150g balsamic vinagar
  • sea salt and pepper

forgot 6-8 red chillis :) i used 1tsp chilli flakes

    chutney
  1. prepare capsicums and chilli,grill or bbq till black i did under grill,then place in plastic bag or place in bowl and put glad wrap leave to cool then they will peel easily and remove seeds.chop in tmx for 2/3 secs speed 4 set aside


     


    place onions in bowl chop 3secs /speed4 scrape down add oil/rosemary and bay leaves and season with salt and pepper  cook 5min/veroma/speed 2 no mc.scrape down 


     


    add sugar/vinagar/prepared capsicum and chillis and cook 100/rev/speed 1 for  20mins


     


    then remove mc replace with steaming basket and cook for further 20min/veroma/speed1/rev checking after 10min if already thick ajust time accordingly
