Ingredients

Chilli Con Queso (Mexican Cheese Dip)

  • 30 g Butter
  • 4 stalks shallots/spring onions
  • 1 clove garlic
  • half teaspoon Mexican Chilli Powder
  • 125 g sour cream
  • 120 g cheese, grated
  • 1 tablespoon jalapeno chillis, drained/sliced
  • 2 tablespoon fresh coriander, chopped

Recipe's preparation

    Chilli Con Queso
  1. Place shallots and garlic in mixing bowl and chop 5 sec/speed 9.  Scrape down sides.

  2. Add butter and Mexican Chilli Powder, saute 2 min/100C/speed 1.

  3. Add sour cream and cheese and blend 10-15 sec/speed 6 or until desired consistency is reached.

  4. Add jalapeno chillies and fresh coriander and blend 10 sec/speed 9.

Tip

Serve warm with corn chips.

    I've made the regular version of this recipe from Taste.com. While the thermomix version is certainly quick and easy, next time I'll make some adjustments to this recipe to suit our preferences. I'd chop the garlic and shallot a bit finer and would also cook them a fraction longer. I added the jalepenos with the sour cream and let the thermomix do the chopping. And I'd leave the cheese in a bit longer to allow it to melt more (this version was still a bit cool, it should be a warm dip). This recipe has really great flavours and people will practically lick the bowl.
