Ingredients

Hidden veggies pizza sauce

  • 1 brown onion
  • 4 cloves garlic, peeled
  • 40 grams olive oil
  • 2 carrots, peeled and roughly chopped
  • 2 Zucchinis, roughly chopped
  • 1 bunches fresh basil, leaves only
  • 1 red capsicum, chopped roughly
  • 0.5 butternut pumpkin, chopped roughly
  • 800-1200 grams tomato passata
  • 1 heaped tablespoons Vegetable stock paste

Recipe's preparation

    Method
  1. Add onion and garlic to mixer bowl Chop 3 sec/Speed 6/MC on.[/size]
  2. Add olive oil and sauté 5 min/100C/Speed 1/MC off.
  3. Add carrot, pumpkin and zucchini to bowl and chop finely for 20 secs/Speed 6/MC on.
  4. Add basil, capsicum and tomatoes to bowl. Chop 3 secs/ Speed 6/MC on.
  5. Scrape bowl down, add remainder of ingredients.
  6. Place simmering basket on top to prevent splatter. Cook 30-40 min/steaming temperature/speed 2/MC off.
  7. Once cooking has finished, purée 1 min/speed 7/MC on until it is a smooth paste. Add more Passata if needed.
  8. Scrape bowl down several times until desired consistency is achieved.

Tip

I freeze leftover pizza sauce in silicone icecream trays and when frozen pop in the freezer in reusable zip lock pouches from the mix shop. Then I just defrost portions as needed.
