  • 2 cloves garlic
  • 1 onion, quartered
  • 4 small pieces red capsicum
  • 20 g olive oil
  • 400 g ripe red tomatoes, quartered
  • 3 dark plums, halved & stones removed
  • 80 g brown sugar
  • 50 g white vinegar
  • 2 teaspoons sea salt, to taste
  • 1 sprig fresh basil, leaves only
  • 3 small leaves Sage
  • 5 small leaves Oregano
  • 5 small leaves marjoram

    Method
  1. Put garlic, onion and capsicum into bixing bowl and chop 3sec/speed 7.

    Scrape down bowl. Add oil and saute 5 min, Varoma, speed 1.

  2. Add all remaining ingredients and cook 30 min , 90 C, Counter-clockwise operation"Counter-clockwise operation" , speed 1 with TM basket on mixing bowl lid.  Remove MC.

  3. Then, blend 1 min, speed 9,(gradually increasing from Speed 1 to 9.

Tip

Great as a pizza tomato base, also great to use with spaghetti bolognaise, or with your favourite pasta dish.

    This smelt so lovely whilst coooking. I didn't have plums so used pears instead and tasted really nice.
