Marinated goats cheese
- 1 litres goats milk
- 1 pieces freshly squeezed lemon juice
- 3/4 level teaspoons salt
- 1-2 cloves garlic
- 1 piece chilli

- Pour goats milk into thermoix
Place cup and lid
Activate 15 min90 deg speed 2 - Pour in juice of 1 lemon, reserve 1 tablespoon for later
Stir briefly with wooden spoon
Let sit for 4 minutes - Line steamer basket with 2 layers on muslin wrap
Pour mixture into lined basket to strain goats milk fat from the whey
Cover over mixture with Muslim wrap and apply pressure to strain whey
Leave to strain for 30 minutes
Reserve whey to make bread if you like - Once strained, pour fat into bowl
Add the reserved lemon juice
Add 3/4 teaspoons of salt
Put chilli in the bottom of garlic crusher and crush the 2 cloves of garlic through the chilli
Add crushed garlic and chilli into the goats fat
Mix well - Shape the goats milk mixture into balls 1 teasooon at a time
Place them into a clean/sterilised jar
Full jar to just above to goats cheese with oil (I like to use grape seed oil as this stays liquid in the fridge unlike olive oil)
Add chilli, garlic and thyme to the jar for decoration (not much gets infused into the cheese
Store in fridge - Use goats cheese straight away or can be stored in fridge for up to 1 month as long as it is covered with oil at all times.
- I use it as a cream cheese spread, on a cheese board, very nice with smoked salmon
I'm not being biased but I think this is the best goats cheese ever
