Ingredients

Riggo's Diane Sauce

  • 15 g garlic cloves
  • 3 slices Bacon slices, Rind removed
  • 80 g Butter
  • 75 g Worcestershire sauce
  • 75 g sherry
  • to taste salt
  • to taste pepper, ground
  • 600 g thickened cream

Steak

  • 30 g Butter
  • 4 fillets beef fillet steak, Eye Fillet Medallions or Scotch Fillet

Sides

  • mashed potato, or beer battered fries
  • steamed vegetables

Recipe's preparation

    Steak
  1. Add 30 g Butter to the fry pan
    Add the steaks and cook to preference (Medium rare etc)
    At the 75% cooked stage add the sauce prepared above to tenderise the steaks
    Serve with Mashed Potato + Vegetables or Beer Battered steak fries

  3. Steam vegetables
    Make Mashed potatoes OR Steak Fries
  4. Sauce
  5. Add garlic to the mixing bowl Speed 9 for 3 seconds
    MC insterted
    Scape down the sides of the bowl
  6. Add bacon slices (Rind Removed) Speed 5 for 7 Seconds
    MC insterted
    Scrape down the sides of the bowl
  7. Add butter
    Add worcestershire sauce
    Add Cooking Sherry
    Add Salt and Pepper to taste
    Cook at Varoma temp Speed 1 for 10 minutes
    MC off
  8. Add Cream
    Cook at Varoma Temp for 6 minutes speed 1
    MC off
  9. Add to the steaks at about the 75% cooked stage, to tenderise the meat in the same fry pan
  10. Serve with sauce poured over the steaks

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
