Ingredients

Chutney

  • 500 g tomatoes
  • 250 g dried apricots
  • 50 g Dried Mixed Fruit
  • 300 g Boiling water
  • 3 cm fresh ginger
  • 1 red chilli
  • 1 tsp paprika
  • 160 g white wine vinegar
  • 200 g sugar
  • 2 garlic cloves

Recipe's preparation

    Method
  1. Soak all the dried fruit in the boiling water

    Add tomatoes, ginger, chilli & garlic into the TM bowl & chop for 3 secs / speed 7

    Set aside

    Drain & reserve the boiling water &  add the dried fruit into the TM bowl & chop for 5 secs / sped 7

    Add the tomatoes etc. back to the bowl with the dried fruit, along with the reserved water & cook for 5 mins / 100 degrees / speed 1

    Add the vinegar, paprika & salt to taste & cook for a further 15 mins / 90 degrees / speed 2 replacing the MC with the basket to allow the extra steam to escape

    Pour into airtight containers, allow the chutney to cool completley before refridgerating

Tip

You can use this chutney also in marinades & mixed with philadelphia cheese as an amazing dip!!

    Added 200g sugar instead of the salt suggested in recipe. Nice flavours however quite runny so added 2teaspoons cornflour and stirred mixture while in a saucepan on stovetop. I know this defeats the one bowl thermo but I didn't want it to overcook. I Would cook again. Next time I won't chop tomato mixture so fine.

    I thought I'd use your recipe, but it appears I have no idea where/when to add the sugar. Not useful.
