Recipe's preparation

  1. Weigh whey into mixing bowl. Heat 60 mins, varoma heat, speed 1.5. Do not insert Measuring Cup. Whey should reduce by half, extend time if not reduced enough
  2. Add sugar and heat 60 mins, Varoma, speed 2. Whey and sugar will begin to caramelise. Do Not insert Measuring Cup. Watch colour and viscosity for a medium-dark amber colour and thickness to syrup. extend time if not to this stage by end of an hour.
  3. Add butter and mix 1 minute, speed 2
  4. Add salt and Vanilla - mix for 1 min, speed 2

Tip

Adjust times for the amount of whey you have to use up. Also adjust sugar accordingly.

    Agree with kiwi64 to keep a close eye on it. I had a thick caramel, like you would use on a slice at 1hr 45 and a scorched bowl. Fortunately it didn't taint the flavour. I made sure to mix it at speed 8 for 30 seconds to remove any graininess at the end.
    Would like to try with a mixture of raw and brown sugar next time for a darker caramel flavour.

    Great way to use use whey from making Ricotta although mine took an hour and a half to change colour (could have been darker still). Tastes good.
