Ingredients
- 250 grams Hot small red chillis, stalks removed
- 2 --- brown onions, peeled
- 5 cloves garlic, peeled
- 4 tablespoons tamarind paste
- 4 tablespoons fish sauce
- 5 tablespoons palm sugar
- 2 ginger, large knobs peeled
- 1 tablespoon chardonnay vinegar

Add all ingredients except the chillis to the TM. Blend at speed 7 until finely chopped. Use spatula to scrape side of TM bowl.
Add chillis to TM bowl, 100 degrees at speed 1 for 20 minutes.
Check to see if chillis are cooked through and soft.
Puree slowly up to speed 10 for 1 minute.
Bottle in sterilized jam jars.
