Ingredients
Gwyneth Paltrow's quinoa with mushrooms and baby spinach
- 2 cloves garlic
- 2 teaspoons fresh thyme leaves
- 45 grams EVOO (extra virgin olive oil)
- 180 grams quinoa (rinsed well)
- 400 grams water
- 250 grams Swiss Brown Mushrooms, sliced
- 1 bunch baby spinach or baby kale, equivalent to 2 handfuls
- Salt and pepper, to taste
- 1 heaped teaspoon EDC vegetable stock concentrate

Add garlic and thyme to bowl and chop 3 sec/speed 7.
Add EVOO and saute for 1min 30 sec/100C/speed 1.
Add quinoa, water, mushrooms and vegetable stock concentrate and cook for 15 min/100C/"Counter-clockwise operation" /speed 1.
Add to bowl the baby spinach or kale, and cook for a further 5 min/100C/"Counter-clockwise operation" /speed 1.
Season to taste with a bit of salt and lots of freshly ground pepper and combine for 10 sec/"Counter-clockwise operation" /speed 3.
Serve, savour and enjoy!

Tip
This combination of earthy mushrooms and nutrient-rich baby spinach or baby kale is another great variation on the nutritious staple quinoa. And with the Thermomix, it is so easy to prepare!
Either baby spinach or baby kale are successful options for this dish. Feel free to choose either what you prefer or what is readily available at the time.

Yummy healthy dish! Based on other reviews, I used only 350g water which was great, but it did thicken and dry up a bit on standing so next time I'll try 370g. I might double the recipe and add the spinach to the varoma in the last 5 min of cooking as I'd love to freeze some. Thanks so much for such a delicious and easy recipe
I cooked this with a mixture of different mushrooms and only 350mls water. Wow yummo! added a sprinkle of parmesan cheese, Thank you this was Amazing!!
Very tasty
I added half the water at first to watch, as quite a few people noted it's too wet and soup like, then added more at step 4. I ended up using about 350g water. We like risotto thicker though. I also switched out the measuring cup to the basket on top to let steam rise through. i came across this recipe as I ran out of arborio rice! so glad I did. Thanks for the recipe

I've made this several times now and each time I have to let it cook for much longer than 15 mins for all the liquid to be absorbed. Can anyone help me? Where am I going wrong? I want a texture as close to rissotto as possible but it's just not happening after 15 minutes. It looks like a soup at that stage! I would really appreciate any advice.
Delicious and healthy. My only complaint is there wasnt enough Next time I might try cooking it all in the thermomix bowl except for the spinach, I would instead add the spinach to the bottom of the thermoserver before pouring the risotto over the top, therefore allowing me to add more ingredients to the recipe.
This is (surprisingly) delicious and easy to make! Easier than risotto and perfect in texture, flavour and nutrition. I used mixed Asian mushrooms, added shallots in the last minute of cooking, and didn't add spinach/kale as I didn't have any. Really nice served with stir-fried garlic prawns. Thanks for the recipe.
This is absolutely delicious! I seem to have to cook it for a very long time though, to get all the liquid absorbed. I tried only adding 300 grams of water this time but there was still so much liquid at the end of the 15 minutes. I blitz all the mushrooms to hide them from my kids.... Could that be the issue? Just wondering what sort of texture everyone else is ending up with? I want a risotto style, is that what everyone else is getting after 15 minutes? This is such a lovely tasting meal and I'd love to get it right!
Second time around it was a huge hit - just like the first! So far the only way I've been able to get hubby into quinoa.
