- 1350 grams potatoes, Floury, cut into 2 cm cubes
- 500 grams water
- 60 grams Butter
- 80 grams cream cheese
- 40 grams Sour Creme
- salt
- white pepper
- 250 grams Milk

- Place water in bowl, potatoes in steaming basket. Place basket in bowl, add lid and measuring cup. Steam 20-25 minutes, 100c, speed 1. Potatoes must be cooked soft. If water is hot to begin with then the steaming time will be less.
- Once cooked, remove steaming basket and discard water. Place butterfly whisk into jug, place potatoes back into the jug, add butter, cream cheese and sour cream. Add salt and white pepper to taste. Place lid and measuring cup onto jug and whip for 10 seconds speed 4.
- Then remove the measuring cup and slowly add milk while mixing for another 10 seconds speed 4. Check seasonings and add more salt and pepper if desired, whipping in for a few more seconds on speed 4.
- Serve immediately and enjoy.
Tip
This is a Kitchen Boss recipe (Season 2) that I have adapted for cooking in the thermomix. I like to make this as a side dish for special occasions - dinner party, Christmas / New Year, Birthday dinners etc. It is very rich and creamy.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
