Combine all ingredients, Speed 6, 30 sec.
Scrape down bowl, add butterfly and mix Speed 4, 30 sec
Scrape and repeat if required for even, fluffy texture
Tip
Use the highest quality oil you have available for best flavour. Substitute any other oil, or high fat ingredient

Tapioca Maltodextrin is a natural product that binds to fat and reconstitues with moisture (in your mouth) - plate next to wet food, not on it! It is widely available in specialty ingredient shops and online.
