Ingredients

Tabouli with preserved lemon

  • 300 grams couscous grains
  • 3 tablespoon olive oil
  • 1 bunch spring onions
  • 1 preserved lemon
  • 1 red pepper
  • 1/2 cucumber
  • 4 l tomatoes, ripe
  • 10 leaves mint, reserve 2 for garnish
  • 1 bunch parsley, reserve a little for garnish
  • black olives
  • 1 red chilli, optional
  • 1 lemon, to garnish
  • to taste Salt and pepper

Recipe's preparation

    Taboui with preserved lemons
  1. In a large serving bowl pour in the dry couscous and add the olive oil, season and give it a stir to coat the grains in the oil, set aside.
  2. In the TM bowl add the spring onions and peserved lemon.
    chop for 5 seconds speed 7
    scrape down the sides.Closed lid"Closed lid"
  3. Add the red pepper, cucumber, tomatoes, chilli (if useing), mint and parsley (reserving a little of both for garnish.
    mix for 10 seconds speed 7.Closed lid"Closed lid"
  4. pour half the mix in to the bowl with the couscous and olive oil, stir well and leave for 15 minuits.
  5. pour the rest of the mix in to the couscous and leave for a further 15 minuits.
  6. Stir in the olives garnish with the reserved mint and parsley and serve with lemon wedges and a drizzle of good olive oil.

Tip

If you feel the tabouli is a little dry add another couple of blended tomatoes or a little water
