Best Ever Creamy Tomato & Bacon Soup
- 1000 grams tomatos, halved
- 2 onions, quartered
- 4 rashers of short cut bacon, roughly diced
- 2 level teaspoons salt (5g), or to taste
- 2 level teaspoons sugar (10g), or to taste
- 3 tablespoon Butter (25g)
- 2 tablespoon plain flour
- 1/2 litre Milk, (480g or 2 cups)

- Add tomatoes, onion and bacon to bowl and using spatula to move ingredients around chop roughly 5 seconds/Speed 5. Add salt, sugar and 1 tbspn of butter to bowl.
- Cook on 120/12 minutes/Speed 1 or until bubbling.
- Blitz 10 seconds/Speed 6.
- Place 2 cups from bowl into another smaller dish and blend flour into this mixture well ensuring there are no lumps. Add this mixture back into bowl and blitz again 10 seconds/Speed 6.
- Add remaining butter and milk and cook approximately 10 minutes/Varoma/Speed 1 with basket on lid to prevent splattering.
- When soup has thickened, blitz again 20 seconds/Speed 9.
- Enjoy !!
Tip
This soup is absolutely DELICIOUS .... even though it is blitzed up the tomato seeds and bacon still provide some texture to the soup .... trust me you will LOVE it !!

This soup was just delicious!! I didn't have all the ingredients so I substituted the fresh tomatoes for
> 1 x 400g can of crushed tomatoes
> 1 x bottle of 700g Passata.
I also replaced the Milk with a 600ml of pouring cream (only because I had it!) and added a garlic clove with the onion step! I served with croutons made from Olive Sourdough - It was amazing!
Bokgatan6:Hi .... and thanks for your review .... to be honest I've never tried freezing it because it's so delicious it gets eaten the same day or the next .... but I'm sure it would freeze without a problem and I would just reheat it for a few minutes at a time in the microwave 😃
