Soup
- 1 brown onion, Halved
- 1 garlic clove
- 1 tablespoon olive oil
- 1 tablespoon Thyme, Leaves
- 800 gram diced tomatoes, Canned
- 2 tablespoons vegetable stock
- 1 litre water
- 125 grams light thickened cream

Add Onion and Garlic to Bowl. Chop Speed 7 for 3 seconds.
Add Oil to bowl and sautee for 3 mins, 100 degrees, Speed 2.
Add Thyme and cook for a further minute on speed 2, 100 degrees.
Add tomatoes, stock and water. Cook for 100 degrees for 5 minutes, speed 2.
Remove measuring cup from lid and replace with simmering basket. Reduce temperature to 60 degrees and cook for further 40 mins on speed 2.
Let cool for 15 minutes.
Replace measuring cup. Blitz soup, starting at speed 5 and working up to speed 8 for 30 seconds. Ensure soup is smooth.
Pour into bowl thickened cream. Cook at 60 degrees, speed 2 for 5 minutes or until heated through.
Serve immediately with sprinkled pepper and extra thyme.
