Ingredients
Curried Pumpkin Soup
- 180 grams brown onion, cut into quarters
- 20 grams Butter
- 500 grams pumpkin, peeled and cut into pieces or if it's butternut pumpkin you don't have to peel just give the skin a good wash and cut into pieces
- 3 stalks celery stalks, roughly chopped
- 1 l carrot, cut into pieces
- 1 heaped tablespoon curry powder
- 500 grams water
- 1 heaped tablespoon Vegetable stock paste, see tips
- 30 grams pouring (whipping) cream, optional
- 2 pinches salt
- 2 pinches pepper, ground
- Fresh Basil or Parsley, leaves only for garnishing

- Place onion into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add butter and saute for 3 min/120 degrees/speed 1.
- Add pumpkin, carrot and celery and chop 15 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add water, curry powder and stock paste and cook 20 min/100 degrees/speed 1.
- Add cream (optional) and blend 1 min/speed 5-9 increasing speeed gradually from speed 5 to speed 9.
- Season to taste with salt and pepper and garnish with basil or parsely and serve hot.

Serve pumpkin soup with fresh crusty bread on the side.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
