- 200 grams leek, (white & green parts, roughly chopped)
- 30 grams coconut oil
- 200 grams bacon, roughly chopped
- 40 grams TM chicken stock concentrate
- 700 grams cauliflower, roughly broken into medium florets
- 650 grams water
- salt & pepper, to taste

Place leek into mixing bowl and chop 3-5 seconds, speed 5. Scrape down sides of bowl.
Add coconut oil and roughly chopped bacon and saute 5 mins, Varoma, speed 1.
Add chicken stock concentrate, cauliflower, water and seasonings and cook for 20 minutes, 100 degrees, speed 1 with the basket on top instead of MC.
Blend 1 minute, speed 9, gradually increasing from speed 1 to 9 until the desired consistency is achieved.
Serve with additional pepper/salt if required and fresh parsley or basil.

Tastes so good!! Made in my TM6
I used 900g of cauliflower and 250g bacon, 2 chicken stock cubes and topped up the water until just under the max line.
Blitzed it... so creamy and delicious.
Would be great with Parmesan cheese.
I will definitely make this again.
The best potato and leek soup that I have had. Easy to make and is so tasty and filling. I added a few cloves of garlic and some celery as well and used stock cubes and water as was out of stock paste.

This is a weekly cook now. Full of flavour and healthy too!
I used a brown onion and a clove of garlic in place of leek. I also ran out of bacon and used a smoky Virginian ham. I love this recipe as its so tasty and apart from the lack of starchiness cannot tell if it's really potato and leek soup for real or not!

This was so tasty! I didn't have any proper stock on hand so i used the packet liquid and simply added the total liquid amount as the stock and water.
So tasty i will make it again for sure

We used vege stock instead of chicken as that is all we had, yummy!!
Another great variation is a brown onion and garlic clove instead of the leek, 500 cauliflower and the additional 200gms in butternut pumpkin, skin on.
