Ingredients
Potato and Leek Soup
- 1 shallot, (or small brown onion)
- 2 cloves garlic, (3 if small)
- 1 tablespoon olive oil
- 20 grams Butter
- 2 leeks
- 6 potatoes, (medium sized, approx. 800g)
- 1 litre chicken stock
- 200 grams water
- 3 sprigs fresh thyme
- 200 gram thickened cream
- Salt & Pepper, to taste

- 1. peel and halve shallot and garlic cloves
2. wash, dry and thinly slice leeks (pale part only)
3. peel potatoes and cut into 2cm cubes
4. Place shallot and garlic into mixing bowl and chop 3 sec/speed 5 with MC on lid. Scrape down sides of mixing bowl with spatula.
5. Add olive oil, butter and leeks (reserve some for garnish, if desired) and saute 8 min/120°C/speed 1 with simmering basket on lid. Again, scrape down sides of mixing bowl with spatula.
6. Add potato and cook for 5 min/120°C/speed 1 with simmering basket on lid.
7. Add stock, water and thyme and cook 20 min/Varoma/speed 1 with simmering basket on lid. Remove and discard thyme stalks.
8. Add 125g cream and blend 1:30 min/speed 5-8 with MC on lid until mixture is smooth.
9. Season to taste with salt & pepper
10. Serve soup hot, swirled with remaining cream (garnished with extra leek, if desired) with toasted sourdough. Enjoy!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
