- 750 grams orange sweet potato, chopped roughly (not peeled)
- 2 Williams pears, stem removed & quartered
- 1 brown onion, peeled& halved
- 1 tablespoon EVOO (extra virgin olive oil)
- 20 grams Butter, cubed
- 300 grams cream
- 1 tablespoon TM vegetable stock concentrate
- 500 grams water
- 1 tablespoon mint, fresh, finely shredded

Place all the vegetables into the TM bowl. Chop for 5-6 secs/speed 7
Add oil & butter & saute 100c/5mins/speed 1
Add the vegetable concentrate & water. Cook 100c/20mins/speed 1
Puree speed 10/10secs
Add cream & mix 100c/1min/speed 1
Pour into serving bowls & garnish with the mint leaves

I made this tonight and it was great. I subbed the cream for 150g lite cream cheese block and 250g of milk & 250g of water instead of 500g of water. The mint was a great garnish too. Thanks billyjak!
The mint leaves give this soup a really great lift.
