Ingredients

soup

  • 1 onion quartered
  • 1 clove of garlic
  • 1/2 leek white part only
  • 20 grams oil
  • 500 grams water
  • 1 heaped tablespoon EDC stock
  • 1 roughly chopped carrots
  • 1 roughly chopped handful pumpkin
  • 1 small cubed potato
  • 1 roughly chopped celery stick
  • 1/8 roughly chopped cabbage
  • 1 handful broccoli
  • optional red lentils
  • 3 Free range chicken thighs
  • optional rice noodles

Recipe's preparation

  1. place onion, garlic and leek in mixing bowl. place MC on and hit turbo until all ingrediants finely chopped.

    scrape down sides and add oil to mixture. Cook for 2 minutes 100 degrees speed 2.

    place veges in bowl (not lentils) and hit turbo until desired size achieved (i like mine still a bit chunky)

    add water, stock, and chicken thighs ( also add lentils at this step if you are using)

    cook for 15 minutes 100 degrees Counter-clockwise operation"Counter-clockwise operation" speed 2

    remove lid (carefully) and take out chicken. Slice or shred to your desire and place back in mixture

    add rice noodles if using ( I used the thin type and broke them in half before placing in bowl) then cook for a further 5 minutes or until noodles cooked on 100 degrees speed 2 Counter-clockwise operation"Counter-clockwise operation"

    serve with crusty bread - enjoy!
