Ingredients

Beetroot&Blackbean Balls

  • 400g Tinned Black Beans, (drained)
  • 1 Raw beetroot, quartered
  • 2 tbsp chia seeds
  • 1 clove garlic
  • 1/2 red onion
  • 1/2 bunch fresh coriander
  • 170 grams oatmeal
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 1 tsp salt
  • dash cayenne pepper
  • 2 Limes, Juiced

Avocado Cream

  • 2 Ripe Avocados
  • 1/2 bunch fresh coriander
  • 1 lime, juiced
  • 1/2 tsp salt

Recipe's preparation

    Beetroot&Blackbean Balls
  1. Preheat oven to 175 degrees.

    Chop garlic, onion and fresh coriander 3 secs speed 7. Set aside.

    Blend Beetroot 5 secs speed 9. Scrape down sided of bowl with spatula.

    Add Black beans, chia seeds, oatmeal and remaining spices. Blend 10 secs speed 7.

    Scrape down sides of bowl.

    Add reserved garlic, onion, coriander mixture and lime juice. Mix 15 secs reverse speed 5. Repeat this until smooth. 

    Coat hands in oil, roll mixture into 2 Tbsp sized balls. place on lined baking tray.

    Optional- coat balls in sesame seeds before placing in oven.

    Cook for 30-35 mins and serve with Avocado cream! 

     

     

  2. Avocado Cream
  3. Add all ingredients in to TM bowl. Blend 15 secs speed 8

    Scrape down sides of bowl.

    Insert Butterfly . Whip 30 secs speed 4

    Serve with Balls. 

Tip

These are fantastic as a starter, or a filling snack! 

Keep in freezer if not consumed within a few days!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    This appealed to me as something different, tasty and healthy. Tried it and reduced the chilli powder significantly as I didn't think I could handle that much and enjoyed these balls and will make again. I didn't have the ingredients to make the avocado sauce though.

    I would just say it would be good if the order of the ingredients were changed to the order in which they are used to make reading the recipe easier.
