Ingredients
- 200 g almonds
- 200 g sharp cheddar
- 1 tsp baking soda
- 1 tsp thyme, dried
- ¼ tsp cayenne pepper
- 6 tbsp cold water

Pre-heat oven to 160C and cover a baking tray with baking paper
Mill almonds in TM bowl for 10 seconds on Speed 7 - then set aside
Cut cheddar cheese into cubes and grate in TM bowl for 6 - 8 seconds on Speed 8
Add almond meal, baking soda, thyme and cayenne pepper to cheese and mix for 5 seconds on Speed 4
Add cold water and mix for mix for 8 seconds on Speed 4 until a ball of dough forms
Wrap dough in cling wrap and refrigerate for 30 minutes until firm
Take 1 teaspoon of dough and roll into a ball
Press down with your fingers onto the baking tray
Each cracker should be about 3mm thick and 2mm away from the next
Continue this procedure with the rest of the mixture
Bake in an oven at 160 degrees until a light golden colour (usually around 25 minutes)
Then turn the crackers over and continue baking for a further 10 minutes
Cool on a rack and serve with a variety of delicious TM dips

Very yum!! Might try it with a roasted capsicum and something dip....
Very moorish!!! I made half the batch and was able to get 65 mini crackers, which I then bagged in lots of 9-10 for snacks during the week

Really good! Could make tons of crackers with this recipe. I only cooked some of the batch. Big mistake- I ran out, and than had to open packet crackers and they tasted rubbish after eating the homemade ones!!

Delicious and so easy.
This mixture makes heaps of crackers!! I rolled them into sausages before setting in fridge then just needed to slice them instead of rolling individually! Tha is for the recipe!!
