- 250 grams Zucchini grated
- 250 grams SR flour
- Salt and pepper
- Chopped chives
- 100 grams parmesan cheese, grated
- 1 egg
- 180 gram Milk
- 35 gram olive oil
- pine nuts

Grate Zucchini and put aside
Grate Cheese and put aside
Mix seasonings and Flour
Put flour, zucchini, chives and cheese into Thermomix and mix for 1 min/speed 2
Add milk, egg and oil - mix 1min/speed 3"Counter-clockwise operation"
Spoon into 24 greased muffin pans and sprinkle with pine nuts
Cook for 15-20mins in 180C oven
Tip
Great on their own in lunch boxes or especially good with soup.

These muffins did not work for me
Nice muffins, simple and tasty. Made 18 larger ones rather than mini muffins. Used wholemeal flour, swapped the milk for natural yoghurt (as I needed to use it up!), and added some chilli flakes.

I forgot to add I used largish sized muffin pans, cooked for 30 min and got 10 muffins.
I made these this morning and already have orders for more. Will be making again tomorrow. I found them a bit moist so might cut back on the milk slightly, but had no complaints from other consumers. I used spring onions instead of chives.
