  • 1 chicken breast, quartered
  • 500 gram Sweet potato and pumpkin, peeled and cubed in 3cm pieces
  • 180 gram quinoa
  • 810 gram water
  • 110 gram Chedder cheese, cut into cubes
  • 1 carrot, peeled and roughly chopped
  • 400 gram Zuccini and yellow squash, roughly chopped
  • 1 medium onion, peeled and quartered
  • 3 garlic cloves, peeled
  • 10 gram olive oil
  • 4 eggs, lightly beaten
  • salt and pepper to taste
  • fresh or dried parsley, basil and oregano (to taste)
  • 2 tomatoes, thickly sliced

Recipe's preparation

  1. 1.     Place 500g of water in the TM bowl. Place the chopped chicken breasts on the bottom level of the Varoma. Cook 10 minutes/Varoma/speed 1-2

    2.     Put the sweet potato and pumpkin on the top layer of the Varoma with the chicken still on the bottom. Cook 20 minutes/Varoma/speed 1-2

    3.     Mash the sweet potato, and roughly shred or chop the chicken. Place in a large bowl and set aside. Rinse out the TM bowl.

    4.     Put Quinoa and water into the TM bowl. Cook 15 minutes/100*C/Reverse/speed 2.

    5.     Drain the quinoa. Add to the large bowl with the chicken, sweet potato and pumpkin. Rinse out the TM bowl. 

    6.     Preheat oven to 180*C

    7.     Put cheese into TM bowl. Chop 10 seconds/speed 9. Set aside (you can place into the large bowl with the chicken, sweet potato, pumpkin and quinoa if it's cooled, otherwise set aside so cheese doesn't start to melt). Wipe down the TM bowl.

    8.     Put carrot, zucchini, yellow squash into TM bowl. Chop 3 seconds/speed 5. Put into large bowl with chicken, quinoa, sweet potato and pumpkin.

    9.     Put onion and garlic into TM bowl. Chop 3 seconds/speed 7. Scrape down the bowl.

    10.   Add 10g olive oil and sauté onion and garlic for 4 minutes/Varoma/speed 1. Add cooked onions and garlic to the large bowl.

    11.   Add the eggs, cheese, salt, peppers and herbs to the large bowl. Mix thoroughly to combine.

    12.   Put into a large ovenproof dish. Pie will rise slightly as it cooks so don’t overfill the dish. Arrange tomato slices on top. Cook 30-40 minutes until pie is set and browned on top.

Tip

-You can add a variety of other vegetables such as brocoli and califlower. If you add lots of vegetables, you may to add another egg to help the pie stay together.

-The pie will rise slighly as it cooks, so don't overfill the ovenproof dish

-You can sprinkle some extra grated cheese on top in the last ten minutes of baking for a cheesy top

-You can add a dash of chilli powder if you'd like to give it a bit of a kick

-Freezes well

    This is great. Lots of vegies and goodness, will make again but maybe with some fresh herbs.

    very easy and a great way to hide lots of veg for my fussy eater - will make again but will add 1 more egg to the mix just to hold it together a little better - a great easy healthy meal for the whole family tmrc_emoticons.)

    This is seriously delicious!!! I am amazed at how tasty this is and so pleased it turned out perfectly first time. The instructions look a little cumbersome but it is actually quite simple. I did step 1-6 then skipped to 9,10, 8 and did 7 (cheese) last which seemed to reduce the amount of washing/rinsing the TM bowl. Thank you so much for a delicious and healthy meal   Big Smile
