Ingredients
- 150 grams Tasty Cheddar
- 30 grams Parmesan cheese
- 1 shallot or 1/2 onion
- 2 tablespoons olive oil
- 200 grams back bacon
- 100 grams Frozen Corn
- 250 grams full cream milk
- 2 eggs
- 350 grams Self Raising Flour
- 1/2 teaspoon cayenne pepper

Preheat the oven to 180 degrees celcius.
Grease the sides and top of a 12 hole muffin tray generously with melted butter.
Cut the cheddar and parmesan cheese into 3cm cubes and place in the TM bowl. Grate for 5 seconds speed 8. Transfer to another bowl and set aside.
Without cleaning the jug add the shallot (or onion) and chop finely 3 seconds on speed 6. Scrape down the sides and repeat if not finely chopped.
Add the olive oil and cook for 3.5 minutes Varoma speed soft.
Add the bacon and chop for 5 seconds on speed 5. Check there are no big chunks left, chop longer if needed. Scrape down the sides. Cook for 3.5 minutes Varoma speed soft.
Add the frozen corn and mix for 2 minutes, speed 1.
Add milk (cooling the bowl) then the eggs, flour, Cayenne pepper and reserved cheese.
Mix for 4 seconds on speed 4 untill just combined.
Spoon in to greased muffin pan.
Bake for 20 to 25 minutes at 180 degrees C
Allow to cool for 10 minutes before removing from the pan to reduce the chance of them tearing or collapsing.
Tip
Corn can be substituted with other chopped veges.
