Ingredients

Zucchini slice

  • 150 grams grated cheese
  • 200 grams Rindless Bacon, Chopped
  • 2-3 carrots, Cut into large chunks
  • 2-3 Zucchinis, Cut into large chunks
  • 6 eggs
  • 2/3 cup GF Flour, I use an All Purpose GF flour
  • 1 teaspoon GF baking powder
  • 1/3 cup cold water

Recipe's preparation

    Method
  1. 1. Pre-heat oven 170 degrees - grease/line a meatloaf tin (approx 21 x 11 cm) and have a silicon muffin tray handy for extra mixture (or use 2 meatloaf tins depending on quantity of vegies included).

    2. Grate 150 grams cheese (approx 1 cup) - 17 seconds - speed 5 - put in separate bowl (or use bought grated tasty cheese).

    3. Add 200 grams - rindless bacon - chopped - 5 seconds - speed 5 - put in bowl with cheese.

    4. Add carrots (approx 2-3) - roughly chopped - 5 seconds - speed 5 - put aside in bowl with other ingredients.

    5. Add zucchini (approx 2-3) - roughly chopped - 5 seconds - speed 4 - put aside in bowl with other ingredients.

    6. Add 6 Eggs to empty TM bowl and mix for 25 seconds - speed 4.

    7. Add all ingredients into TM bowl including GF flour & GF Baking Powder & Water.

    8. Mix well 30 seconds Counter-clockwise operation"Counter-clockwise operation" speed 5 - make sure you use Reverse. 

    9. Pour into prepared pan and bake in oven for 30 minutes or until cooked through.

Tip

Don't bother washing the TM bowl in between steps.

I try and use about the same quantity of Carrot as Zucchini, you could use other vegies too or instead.

Is nice if you sprinkle with pine nuts before baking.

Delicious served with a relish/chutney.

Makes a great quick breakfast or make in small silicon muffin tray for lunch box snacks.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    It tasted great, i just found it a little runny as i had to convert the GF to Almond Meal. Lovely recipe !

    Yum. Didn't have any bacon so added in 1 tbpsn vegetable stock paste for a bit of flavour. Also used 8 eggs. Thanks!
