Ingredients

Dough

  • 400 g sweet potato, peeled and cubed
  • 1.5 litres Boiling water
  • 3-4 leaves pandan leaf, knotted
  • 270 g glutinous rice flour
  • 3 tbsp vegetable oil
  • 3 tbsp white sugar
  • Food colouring, any

Filling

  • 350 g Roasted Peanuts
  • 200 g raw sugar
  • 3 tbsp vegetable oil

Recipe's preparation

    Method for Dough
  1. Place varoma basket on TM and weigh in 400g sweet potato set aside
  2. Add 1.5L of Boiling Water to Bowl and knotted Pandan Leaves
  3. Place Varoma back on top of lid. Steam 20mins Varoma Sp4. When sweet potato is cooked set aside and empty water from bowl then add your cooked sweet potato back into bowl.
  4. Add 250g Glutinous Rice Flour, 3Tbsp vegetable oil, 3 Tbsp Sugar
    Mix 30secs Sp5
  5. Knead 1 minute
    Wrap in Thermomat and set aside
  6. Method for Filling
  7. Add peanuts and sugar
    Turbo 2 secs x 3
  8. Remove 1/2 mixture into a bowl set aside
  9. Add 3Tbsp oil
    8secs Sp8
  10. Return rest of filling to bowl
    30Secs Sp2
  11. Assembly
  12. Dust Thermomat and moulds with extra rice flour
  13. Weigh skin and filling - 40g Skin and 20g of filling
    Roll out skins add filling and shape into balls then press into moulds. Untill all skin and filling used

    Unmould cakes straight onto banana leaves
  14. Place kuihs onto varoma basket and tray then steam for 10-15 mins on Varoma Sp3.5
  15. Once cooked, brush lightly with vegetable oil
    Enjoy warm or cooled.

Tip

Can leave dough plain or add natural/food colouring to dough
eg. blue pea juice - blue, beetroot juice - red

Traditionally shaped in a tortoise to symbolise longevity, normally eaten at birthdays or special occasions.
