Ingredients

Cake Mixture

  • 1 zest of one lemon, Peel zest with Vegetable peeler, avoid pith
  • 200 grams raw sugar
  • 230 grams Self Raising Flour
  • 10 grams poppy seeds
  • 200 grams water
  • 40 grams vegetable oil
  • 10 grams vinegar, white
  • 1 Lemon Juiced

Recipe's preparation

  1. Preheat oven to 170- 180 degrees.

    Prepare patty pans. ( Approx 24 ) 

    In a clean and dry Mixing bowl add Lemon zest, and sugar, mill 10 sec/ speed 7.

    Add Self Raising Flour, and poppy seeds.

    Combine dry ingredients 5 sec/  speed 4.

    Add juice of one Lemon, Water, vegetable oil and Vinegar. Combine wet and dry ingredients. 6 sec/ speed 5.

    Spoon mixture evenly into patty pans. Bake for 8-12 minutes, or  until golden, and spring back slightly when touched.

Tip

These little cakes freeze well for school lunchboxes.

in this photo the cakes have been iced in a basic icing sugar and Lemon Icing BUT Lemon Cream Cheese frosting is perfect on top of these little cakes also.

This cake can also be baked as one large round cake. Pour mixture into 20cm round cake tin, grease or line with baking paper. Extend baking time for  approx 20 minutes, or until cake is golden brown, springs back slightly when touched..

    Sooo delicious. A slight tang. I didn’t add the full amount of sugar and I got 36 mini (bite size) muffins.

    Just delicious!  This was a great help - no eggs or milk handy and I was still able to turn up to my in laws with a delicious cake.  I just used 5g of vinegar and added my own soaking syrup.
